Ingredients

Looking for a high protein chia seed pudding that you can make the night before? This chia pudding recipe takes 15 minutes of prep and is ready to eat when you wake up. The base is Organic Chia Seeds soaked in milk with Perfection Whey Vanilla, which brings each serving to around 17g of protein.

Instead of adding sugar, we sweeten the pudding with Flavour Powder White Chocolate Coconut, less than 12 kcal per scoop. Layered with fresh mango purée, passion fruit and coconut flakes, it tastes like summer in a glass. Perfect for breakfast, as a snack after training or as a light dessert.

HOW TO MAKE CHIA SEED PUDDING WITH PROTEIN

  1. Start the evening before. Whisk the milk, Perfection Whey and Flavour Powder together in a large bowl until there are no lumps.
  2. Stir in the chia seeds. Wait 5 minutes and stir again, so the seeds do not clump together.
  3. Cover the bowl with cling film and leave it in the fridge overnight, or for at least 4 hours.
  4. When you are ready to serve, cut a third of the mango into small cubes and scoop the pulp out of the passion fruit.
  5. Cut the rest of the mango into pieces and blend it into a smooth purée with a food processor or hand blender.
  6. Divide the mango purée over 4 glasses and spoon the chia pudding on top.
  7. Finish with the mango cubes, passion fruit and coconut flakes.

WHAT IS THE RIGHT CHIA PUDDING RATIO?

For a thick, spoonable chia pudding, use about 1 part chia seeds to 6 parts liquid. In this recipe that is 100g of chia seeds to 600ml of milk, which gives 4 servings of 25g chia each. Like it thicker? Use a little less milk. Prefer it looser? Add a splash of milk before serving.

  • Use milk instead of water for a creamier texture and extra protein.
  • Mix the protein powder into the milk first. Whey dissolves much better in liquid than when it is stirred in after the chia seeds.
  • Give it time. Chia seeds need at least 4 hours to absorb the liquid and turn into a pudding.

COMMON MISTAKES (AND HOW TO AVOID THEM)

  • Stirring only once: chia seeds sink and clump. Stir again after 5 minutes for an even texture.
  • Not soaking long enough: after 30 minutes the pudding is still runny and the seeds are crunchy.
  • Too much protein powder: more whey makes the pudding thick and chalky. Stick to one scoop for 600ml of milk.
  • Forgetting to cover the bowl: the pudding absorbs fridge smells and dries out on top.

CHIA PUDDING FLAVOURS AND SWAPS

Classic vanilla

Use Flavour Powder Vanilla and top with fresh berries for an easy everyday version.

Chocolate

Go for Perfection Whey Chocolate and Flavour Powder Milk Chocolate, then top with banana.

Raspberry

Stir in Flavour Powder Raspberry Yoghurt and layer with fresh or frozen raspberries.

Coconut milk

Swap half of the milk for coconut milk for an even more tropical, creamy pudding.

With yoghurt

Fold a spoonful of Greek yoghurt or skyr through the pudding before serving for extra creaminess and protein.

Plant-based milk

Soy milk works well too and keeps the protein content high.

Can I make chia pudding without protein powder?
