For these Fluffy Blueberry Pancakes we used the Body&Fit Pancake Mix, whipped egg whites and the topping completes the recipe. The Fluffy Blueberry Pancakes taste great, contain 28 grams of protein per serving (without toppings) and they are perfect as a breakfast, afternoon snack, or a pre- or post-workout bite.

Preparation Method

  1. Put the Pancake Mix together with the baking powder and water in a bowl and mix to a smooth batter.
  2. Want to switch up the flavour? Stir a scoop of Flavour Powder into the batter at this stage, it comes in different flavours, so you can give your pancakes a new twist every time.
  3. Add the blueberries to the batter. Keep some of the blueberries for garnish.
  4. Beat the egg whites in another bowl with a mixer until stiff.
  5. Gently fold the beaten egg whites into the pancake batter so that the batter gets a bit more volume.
  6. Spray the frying pan with Smart Cooking Spray and heat the pan over medium heat.
  7. Pour the batter into the skillet and wait for the top of the pancake to dry.
  8. Then turn it over and fry the other side of the pancake until golden brown. Bake the other portions in the same way.
  9. Stack the Fluffy Blueberry Pancakes and top them with your favorite toppings. Go with whatever you love most. For example Skyr, figs, blueberries, cashews, walnuts, Whey Choco, peanut butter, Whey Protein Balls or a drizzle of maple syrup.
