  • Courgettes - 2
  • Lean ground beef - 300 g
  • Mushrooms, sliced - 80 g
  • Bell pepper, sliced - 1
  • Onion, chopped - 1
  • Garlic, cut - 2 pieces
  • Tomatoes, big - 2
  • Sambal - 2 tsp
  • Flat parsley, finely chopped - 2 tbsp
  • Provencal herbs - 1 tsp
  • Pepper
  • Salt
  • Grated (goat) cheese
  • Quinoa, cooked *- 300 g
  • Green salad

Preparation method

  1. Preheat the oven to 200 degrees.
  2. Cut the courgette lengthways and hollow out the inside with a spoon. Fry the minced meat in a frying pan. Add the vegetables and fry it until everything is done.
  3. Add the sambal, parsley, salt and pepper.
  4. Grease an oven dish with a little olive oil and place the courgettes in the dish.
  5. Fill the courgettes with the minced meat mixture and spread the cheese on top.
  6. Bake the courgettes in the oven for about 20 minutes.
  7. Serve with quinoa and a green salad
