Diet-proof: courgetti

Ingredients

  • Courgette - 250 g
  • Coconut oil - 1 tbsp
  • Garlic, pressed - 2 cloves
  • Peeled shrimps, scampis or prawns - 100 g
  • Freshly squeezed lemon juice - 1 tbsp
  • Pesto - 1 tbsp
  • Parmesan cheese - 2 tbsp
  • Parsley, finely chopped - 1 tbsp
  • Salt and pepper to taste

 

Method

Do you love pasta, but do you sometimes find it a bit too heavy on your stomach or do you want to eat less carbohydrates? Then this delicious recipe is a godsend! For those who have never heard of courgetti; courgetti are thin strings of courgette that look like spaghetti (courgette + spaghetti = courgetti). In combination with garlic prawns you can prepare a delicious recipe quickly and easily. Besides the fact that prawns are very tasty, they also contain many vitamins and minerals such as vitamins B12, D, E, selenium, magnesium, potassium, zinc, copper, phosphorus and iron! This recipe is a real healthy winner!

Preparation method

  1. Wash the courgette and cut into spaghetti ribbons with a spiralizer. Heat the oil in a pan and fry the garlic with the prawns. Lower the heat as soon as the prawns turn light pink.
  2. Add the courgetti and heat it in the pan for a while. Add the lemon juice with the pesto and mix well with the spaghetti.
  3. Put the courgetti on a plate and sprinkle with the Parmesan cheese and parsley. Season with salt and pepper.
